For the Jackfruit

450g tinned young green jackfruit in water
1 tbsp olive oil
4 tbsp bbq seasoning
Salt and pepper to taste

50g dairy free butter
4 spring onions
1 tbsp garlic puree
50g plain flour
500ml non-fairy milk
100g vegan cheese
2 tbsp hot sauce
4 tbsp bbq sauce
25g nooch (nutritional yeast) salt and pepper to taste


Prepare the jackfruit | Wash, drain and pat dry the jackfruit | Put the jackfruit in a roasting tin and crush the chunks in between your fingers to split the fibers | Remove any seeds (they look a little like cannellini beans) | Drizzle over the olive oil, sprinkle over the bbq rub and a little salt and pepper and stir everything together so the jackfruit is well covered | Put the tin in the oven and roast the jackfruit for 30 minutes
Make the spicy BBQ cheese sauce| Trim and finely slice the spring onions | Grate the cheese | Melt the dairy free butter in the frying pan over medium heat | Add the spring onions (reserving the green parts for garnish) and garlic puree and stir for 1 minute | Add the flour to the pan and stir until it clumps together | Add the milk to the pan and use a balloon whisk to mix until smooth | Add the cheese, hot sauce, bbq sauce and nooch to the pan and stir until smooth | Taste and season to perfection with salt and pepper | Turn the heat right down to keep the sauce warm


Cook the pasta | Pour the macaroni pasta into a saucepan of boiling salted water and cook according to package directions (approximately 8-9 minutes)

Finish and serve | Loosen the sauce with a little pasta water if needs be | Drain the pasta with a colander, pour the pasta into the sauce and gently stir to cover and coat | Spoon the pasta into bowls, sprinkle over the spring onions and a little pepper | Top with the BBQ jackfruit and serve immediately
